I’m so excited that summer is here. My schedule has changed and I will have some extra time to bake! I wanted to make something that my boyfriend and I haven’t had for awhile so I decided on making some pancakes for us over the weekend. I’m not the kind of person who can come up with my own recipe on the spot for something like that. I did some digging around the internet and finally found a recipe that I wanted to try.
I like to cook as ‘clean’ or ‘raw’ as I can get so I got a recipe with little ingredients. This recipe only has 8 ingredients, pretty cool. This recipe also calls for 2 tablespoons of baking powder, not 2 teaspoons of baking powder. Don’t worry that is not a typo, the pancakes are just light and fluffy. Over all this recipe was super easy to follow and very tasty. My boyfriend and I loved them. I will be adding this recipe to my baking rotation.
Vanilla Vegan Pancakes
This recipe makes about 8 to 10 pancakes – perfect for the 2 of us
What you will need:
- 1 cup of all purpose flour
- 1 tablespoon of sugar – I used what I had in the cupboard, Coconut Sugar
- 2 tablespoon baking powder
- pinch of salt
- 1 cup soy milk – I used original almond milk
- 1 tablespoon oil
- 1 tablespoon applesauce
- 2 teaspoons vanilla extract
I used a cast iron pan so I let it heat up while I mixed in the ingredients. I did about 3 on my oven, which would be light to medium heat.
Combine all dry ingredients in a large bowl.
Combine all wet ingredients in a separate bowl, and then add them into the dry ingredients.
Stir all ingredients together until you have a creamy texture and with no lumps from the flour.
You are now ready to make some pancakes.
Pour as much as you want into the pan, however big or small you like your pancakes. As soon as the edges look dry and when lots of little bubbles apear at the top gently flip it over. It should only take about 1-2 minutes per pancake.
Serve with vegan butter and maple syrup! Enjoy!!
