Lately I’ve been craving some No Bake Bars. I remember my grandma making them for me whenever I would come over when I was a kid. I looked at her recipe and was amazed at how much sugar and processed stuff was in them. Don’t get me wrong, they are amazing but I’m just at a point in my life where I want to make as many healthy choices as I can. I’m fine with eating some sugar but definitely not as much as the average American eats. I’m not a master chef who can make up a recipe on their own, Ramsey would strangle me on his show. However I can be resourceful and so I did some digging around and was able to find a recipe that sounded good.

This vegan no bakes recipe calls for only 7 ingredients, if you wanted to add protein powder into your recipe it would be only 8 ingredients. That’s pretty cool to me! I know people who love eating Snickers bars, that have around 18 ingredients. Crazy huh!? My boyfriend and I really like them, he keeps asking me when I’m going to make them again. I think this is a great recipe to try and share with your family and friends!

Vegan No Bakes

Makes about 10-15 bars

What you will need:

• 2 cups oatmeal
• 1/2 cup creamy natural peanut butter
• 1/2 cup almond milk
• 1/4 cup maple syrup
• 2 tablespoons cocoa powder
• 1/2 teaspoon vanilla extract
• pinch of salt

Place oatmeal in a bowl for later.

Put almond milk, peanut butter, maple syrup, cocoa powder, and salt in a saucepan and cook over medium-low heat. Stir often so you don’t burn the ingredients. You want all the ingredients to be completely dissolved and to become thickened like a sauce.

Once you have a sauce like thickening, remove from heat and stir in the vanilla extract.

Next, pour the mixture over the oatmeal and stir until all oats are covered.

Place it in the fridge for 15 minutes.

Now it’s time to take your no bake mix and make whatever shape of no bakes you would like. I just grabbed a spoonful, rolled into a ball and then placed on a pan and then flattened with my fingers to make a cookie like shape. I’ve found it’s best to put them back in the fridge as soon as you finish shaping them. You want to keep the no bakes in the fridge until they are ready to serve. I would recommend placing parchment paper in between layers of the no bakes. They will stick to each other if you place one on top of the other.
